Jerusalem Artichoke or Sunchokes (Helianthus tuberosus) - H: 6-9ft, W: Infinite, Sun: Full, Roots: Tubers that have similar texture to water chestnuts that can be harvested fall to spring and be baked, fried or eaten fresh, Note: Perennial and self pollinating, Zone: 3-9. Pot size: 1 gal.

 

Maximilian (Helianthus maximiliani) - H: 3-6 ft, W: 2-4 ft, Sun: Full, Zone: 3-9, Description: Tall pants with hairy stems and narrow green/grey leaves. Also, plants produce multiple bright yellow sunflowers per stem. Uses: Tubers are similar to those of jerusalem artichokes/sunchokes and can be prepared the same way. Also, seeds can be eaten as snacks or on salads like other types of sunflower seeds. Note: A native perennial plant to the great plains of North America and traditionally used by the Lakota and Sioux tribes as an important food source. Plant was named after German Prince Maximillian who discovered it on a trip in 1832.
